Pasta ... Pasta ... Failure was inevitable

I wanted so bad to make everything I saw on Food Network or you tube!  I saw how other chefs made things, so I got to work making new dishes in the kitchen.   My mom is half Italian, and I love pasta, so I decided to make home made ravioli!  The first time I attempted home made pasta I spent almost 4 hours in the kitchen, making my own pasta dough, rolling it out, stuffing it with cheese then boiling.  I worked so hard.... and it was AWFUL!  It was so thick and rubbery.   I was so upset.  I was chewy and hard and just gross!

But that didn't stop me.  I tried it again, and again, and finally the third it wasn't only edible, it was delicious!  It wasn't until the 5th or 6th time that my parents bought me a pasta maker to roll the pasta dough perfectly even and thin!

One time I wanted to make raviolis for my class at school.  We didn't have ricotta cheese, so I went back to you tube to learn how to make that from scratch too!  What, you don't make your own ricotta?  I do!  (By the way, its milk, lemon juice, and salt.  Boil and strain with cheese cloth, its that simple! add some seasoning or basil for extra flavor).    I made home made raviolis, and brought them in to my classmates... they loved them!  Check out the video of me making it at home!
